Beans stew is a delicacy eaten in West Africa which is also high in protein.

Instructions
  1. Begin the process by cooking beans for about 30 minutes in a large saucepan.
  2. In another pan fry your onions for about five minutes and add your choice of tomatoes, just like making the Ghanaian Tomato Stew.
  3. Add in your salt and Cajun seasoning and let it cook for about 10 minutes then add the beans and let it simmer for another 10 minutes.
  4. Add in your mix of ginger, garlic, and habanero peppers. Serve beans with fried plantains (pictured above), rice or gari.
